We got this recipe from my sister, Cyd King. I have no idea where she got it, but it is a delicious snack (see what we did there?), especially during the spring and summer.

  • 1 lb. fresh asparagus, trimmed
  • 1 lemon, halved
  • Salt

In a large saucepan, bring to a boil enough water to cover the asparagus.

Fill a large bowl with water, and add a healthy amount of ice cubes. The goal is to make an ice bath.

When the water is boiling quickly place the asparagus in the water. For thinner stalks, boil for 90 seconds. For thicker stalks, boil for up to 2 minutes. Quickly move the asparagus from the boiling water to the ice water.

Chill the asparagus in the ice water for 60 seconds, then move it to a separate plate. Sprinkle salt to taste, and drizzle with a little of the fresh juice.

Enjoy now or chill in the fridge.

Cook time: 3 min.
Serves 4.
