This is another Filipino stew my dad’s dad made. We have it at family get togethers and reunions. Just another tradition from the TabyanInn.

  • 1/4 cup oil
  • 1/2 onion, chopped
  • 1 lb. peeled shrimp or firm fish (or combination of both)
  • 1/2 lb. fresh spinach, chopped (canned or frozen spinach can be used)
  • 1 14 oz. can tomatoes or 1 small (8 oz.) can tomato sauce
  • White rice, cooked

Heat oil over medium heat in a large pot. Add onion and cook about 5 min.

Add shrimp and/or fish. Cook until nearly done, about 15 min.

Add 4 cups water and spinach. Cook until spinach is nearly done, about 15 min.

Add tomatoes or tomato sauce. Continue cooking until spinach is done, about 5 more min.

Serve in a bowl over a small amount of cooked white rice.

Prep time: 30 min.
Cook time: 40 min.
Serves: 8.
