Traci’s Beef Salad
This recipe for beef salad is another one of Traci’s secrets and is great for leftover beef roast. It is fantastic on crackers as an appetizer, or on bread as a sandwich. Our guests love it.
Ingredients
- 2 cups leftover roast beef
- 3 eggs, boiled and peeled
- 1 white onion
- 3 teaspoons pickle relish
- ½ cup mayonnaise
- 2 tablespoons sugar
How To Make
In a hand-crank sausage grinder, grind the roast beef. Next, grind the eggs and then lastly the onion (the onion helps clean the eggs out of the grinder).
Place in a large mixing bowl and add the relish, mayonnaise and sugar. Salt and pepper to taste.
Serve on crackers or on bread for sandwiches.
Prep time: 15 min. Cook time: None. Serves: 8.
