Smothered Corn
This is a great Southern side dish—simple, hearty and fantastic. This is the way my dad’s mother made corn. Our guests love it!
Ingredients
- ½ cup oil
- ¼ lb. salt pork, sliced
- 1 onion, chopped
- 4 lb. fresh corn, cut from the cob
- Salt & pepper to taste
- White rice, cooked
How To Make
In a medium pot, heat oil over medium-high heat. Add salt pork and onion. Cook until onion is softened, about 3 min.
Add corn, salt, pepper and 3 cups water. Cover and cook over medium heat. Add water as needed to maintain water level. Remember: this is smothered corn, not boiled corn! Cook for about 1 ½ hours or until corn is completely cooked.
Serve over cooked white rice.
Prep time: 45 min. Cook time: 1 hour 45 min. Serves: 8.
