Roasted Sausage and Peppers

This dish is nothing more than good, simple comfort food at its finest. The whole house smells wonderful while this cooks—our guests can’t wait to eat!

Ingredients

How To Make

Preheat oven to 425F.

Whisk the olive oil and mustard together in a small bowl. Add garlic, parmesan, Italian seasoning, salt and black pepper, whisk until well combined.

Place the sausage, potatoes, peppers, onion and rosemary in an extra large mixing bowl. Pour over sausage mixture and toss well until everything is coated.

Grease a large, rimmed cooking sheet and pour out the mixture. Spread evenly over the baking sheet. Bake 1 hour until sausage is cooked through and potatoes are golden and tender.

Serve with parmesan and a drizzle of extra-virgin olive oil.

Prep time: 30 min. Cook time: 1 hour. Serves: 6.
