Red Beans and Rice
A basic Cajun staple! Our family recipe for red beans and rice is a basic one, that resists the urge to complicate matters, and just let the ingredients shine through. The salt pork is critical.
Ingredients:
- 1 lb. dry small red beans
- ¼ lb. salt pork, sliced
- 1 white onion, finely chopped
- 4 green onions, finely chopped
- ½ cup parsley, chopped
- Salt & pepper to taste
- White rice, cooked
How To Make:
In a large pot, cover beans with water. Add water until it is about 2 inches above the beans. Add salt pork and boil on high heat until beans start to get soft, about 1 hour.
Add onions, green onions and parsley, salt and pepper. Boil until beans are soft, about 1 hour, adding water as needed to keep a soupy consistency.
Reduce heat and simmer for about 15 min more.
Serve on a plate over cooked white rice.
Prep time: 15 min. Cook time: 2 hours 15 min. Serves: 8.
