This recipe for beef salad is another one of Traci’s secrets. She uses leftover Roast Beef, and it is fantastic on crackers as an appetizer, or on bread as a sandwich. Our guests love it.

  • 2 cups leftover roast beef
  • 3 eggs, boiled and peeled
  • 1 white onion
  • 3 teaspoons pickle relish
  • 1/2 cup mayonnaise
  • 2 tablespoons sugar

In a hand-crank sausage grinder, grind the roast beef. Next, grind the eggs and then lastly the onion (the onion helps clean the eggs out of the grinder).

Place in a large mixing bowl and add the relish, mayonnaise and sugar. Salt and pepper to taste.

Serve on crackers or on bread for sandwiches.

Serves: 8.
