This is the basic basic marinara sauce we use at the TabyanInn. Don’t let the simplicity fool you–the tastes meld into pure red gold!
- 2 tablespoons quality olive oil
- 6 cloves garlic, minced
- 1 28 oz. can fire-roasted, crushed tomatoes
- 1/8 teaspoon crush red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1 large sprig fresh basil
Heat olive oil in a medium sauce pan over medium-high heat.
Add garlic, stirring frequently. Cook for 1 min. until fragrant. Do not burn.
Add tomatoes, red pepper, salt, oregano and black pepper. Stir until ingredients are combined. Add the basil sprig, gently pushing it down into the sauce.
Bring to a simmer, reduce heat to medium-low, and simmer for 15 min. Discard basil sprig.
Serve immediately.
Prep time: 5 min.
Cook time: 25 min.
Makes about 1 1/2 cups of sauce.

This recipe can easily be doubled for more sauce.
We love using the fire roasted tomatoes, but you do not have to. Do get the best quality tomatoes you can find or are willing to buy–with this simple a recipe, the quality of the ingredients really comes through.
