This is a great Southern side dish. Simple, hearty and fantastic. Our guests love it!
- 1/2 cup oil
- 1/4 lb. salt pork, sliced
- 1 onion, chopped
- 4 lb. fresh corn, cut from the cob
- Salt & pepper to taste
- White rice, cooked
In a medium pot, heat oil over medium-high heat. Add salt pork and onion. Cook until onion is softened, about 3 min.
Add corn, salt, pepper and 3 cups water. Cover and cook over medium heat. Add water as needed to maintain water level. Remember: this is smothered corn, not boiled corn! Cook for about 1 1/2 hours or until corn is completely cooked.
Serve over cooked white rice.
Prep time: 45 min.
Cook time: 1 hour 45 min.
Serves: 8.
