This little-known family recipe is another from my Grammy. Simple, easy and delicious. We love it, and think you will, too.
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 1 large can salmon
- 1 15 oz. can tomato sauce
- 1 teaspoon black pepper
- White rice, cooked
Heat oil over medium-high heat in a medium pot.
Add onion and cook for 3-4 min. Add salmon, tomato sauce and 1 1/2 cans water. Stir, but leave salmon in small chunks if possible. Add pepper and bring to a low boil for about 20 min.
Reduce heat and simmer for about 5 min more.
Serve on a plate over cooked white rice.
Prep time: 20 min.
Cook time: 30 min.
Serves: 8.
