We got this potato salad recipe originally from Uncle Rocky, but my mom always made two batches: one with onions, and one without. It was always very simple. None of that other stuff to clutter it up!
- 6 potatoes, peeled and cubed
- 6 eggs, hard boiled, peeled, with yolks and whites separated
- 3 cups real mayonnaise
- 2 tablespoons vinegar
- Salt & pepper to taste
- 3 stalks celery, very finely chopped (optional)
- 1 bell pepper, very finely chopped (optional)
- 1/4 cup parsley, very finely chopped (optional)
Boil potatoes until they are soft throughout, about 30 minutes. Drain well and put in a large bowl.
In a medium bowl, combine egg yolks, mayonnaise, vinegar, salt and pepper. Mix together and whip, then add potatoes.
If you must, add celery, bell pepper, parsley and chopped egg whites. Mix thoroughly. Add mayonnaise to taste.
Prep time: 30 min.
Cook time: 45 min.
Serves: 12.
