This is a great pasta dish that never fails to impress. Adapted from a Gordon Ramsey recipe, people are always asking how to make this Bolognese sauce.

  • 2 tablespoons olive oil
  • 1 clove garlic, peeled and chopped
  • 1 lb. best-quality Italian sausage
  • 8 oz. linguine or other pasta
  • 8 oz. cherry tomatoes, halved
  • Fresh salt and pepper, to taste
  • Parmesan cheese, freshly grated

Remove meat from skins and break into smaller chunks, like little meatballs.

In a pot, heat water until boiling. Add 1 tablespoon oil to the water, add the pasta and salt liberally. Cook until done.

In a large skillet or frying pan, add 1 tablespoon olive oil and heat over medium heat. Sweat the onions and garlic together for 3-4 min, or until they are softened. Add meat to the pan and brown for 5 min or so. Add the tomatoes and cook for another 5 min until they begin to break down and the meat is done. Add 2 tablespoons of the pasta water to the pan as it cooks to make a little sauce.

Drain the pasta, reserving 2 tablespoons more pasta water. Add the drained pasta to the pan with the meat mixture. Toss well, adding the reserved pasta water to the pan to loosen the pasta mixture as needed.

Adjust flavor with salt and pepper as needed.

Serve with fresh Parmesan cheese on top.
