This smoked chicken recipe is a standard at the TabyanInn. The herbs give it a great flavor, without too much smoke.

  • 1 Whole Chicken

Stuffing:

  • 2 Lemons
  • 2 cloves of garlic
  • sprigs of thyme
  • sprigs of rosemary
  • sprigs of parsley

For Herb Butter:

  • 3 tablespoon butter
  • 1 teaspoon ground sage
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1/2 teaspoon salt

Heat the smoker to 250F.

Rinse off the chicken thoroughly. Stuff the cavity with the stuffing ingredients.

Gently lift skin with your finger and smear herb butter on both breasts. If you have extra, go ahead and rub the outside of bird as well.

Smoke with fruit wood (apple, etc.) at 250F for about 3 hours–until internal temp is 165F. Only add wood for the first hour to give it a lighter smoke flavor.

Remove the chicken from the smoker and tent with some foil. Let it rest for at least 15 minutes before serving. Discard the stuffing.

Cook Time: 3 hours, 30 min.
