What would be a Cajun stew without a roux? This family recipe has one, which gives it a great, rich flavor. Enjoy.

  • Roux
  • 1 lb. beef stew meat
  • Salt & pepper to taste
  • 3 potatoes, peeled and cubed
  • 1 bell pepper, chopped
  • 3 stalks celery, chopped
  • 4 carrots, sliced
  • 1 small can V8 juice

In a large pot, make a medium amount of roux.

Add stew meat, salt and pepper. Brown meat on all sides, for about 10 min. Add potatoes and brown for about 10 min. more.

Add bell pepper, celery and carrots, along with about 6 cups water. Bring to a full boil and cook until veggies are soft, about 30 min.

Reduce heat and simmer for about 15 min. The stew should be slightly thicker than a soup.

Prep time: 30 min.
Cook time: 1 hour 45 min.
Serves: 8.
