We didn’t really eat dirty rice growing up, but as I got older, I fell in love with it. This is a recipe from my sister Cyd, and we think you will enjoy it as much as we do.
- 1/2 to 1 lb. chicken giblets, boiled until tender (or 1 Swanson Chicken Flavor Boost)
- 1 lb. ground chuck
- 1/2 cup bacon drippings
- 1 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup celery, chopped
- 1/4 cup parsley, chopped
- 2 cloves garlic, minced
- Salt & pepper to taste
- Red pepper to taste
- 1/2 cup green onion tops, chopped
- Pinch of thyme or basil
- 2 cups white rice, cooked
Preheat oven to 300F.
Cook ground chuck and chopped giblets in bacon drippings until browned. Drain off fat, add remaining ingredients and continue to cook for about 10 min. more.
Spoon into a greased casserole dish and cook at 300F for 20-30 min. or until dry.
Prep time: 30 min.
Cook time: 1 hour.
Serves: 8.
