This recipe slow cooker Italian chicken is a great, easy dish to make any time of year. It’s great for company or a night alone.
- 4 boneless, skinless chicken breast halves
- 1 envelope Italian salad dressing mix
- 1/4 cup water
- 8 oz. cream cheese, softened
- 15 oz. can cream of chicken soup
- 4 oz. can mushrooms
- White rice OR wide egg noodles, cooked
Trim chicken breasts of all visible fat and skin. Place in slow cooker. Combine salad dressing mix with 1/4 cup water, and pour over chicken.
Cover and cook chicken on low for about 5 hours.
In a saucepan, combine cream cheese and soup. Whisk over low heat until well blended and warned through (do not boil). Stir in mushrooms. Pour over chicken.
Increase heat in slow cooker to high, and cook 1 more hour.
Serve over rice or egg noodles. You can also double up the soup/cream cheese for more sauce on your noodles.
Prep time: 15 min.
Cook time: 6 hours.
Serves: 8.
