This breakfast casserole is a wonderful breakfast dish. It is one of our "go-to" meals for guests when they stay over, or just when we want a good home-style meal.
You can tweak this recipe for whatever you have on hand: bacon or sausage, whatever kind of bread you have, any veggies you have. Your imagination is the only limit.
- 6 eggs
- 1 1/2 cups milk
- 1/2 teaspoon dry mustard
- 4-6 slices white bread, crust trimmed and cubed
- 4-6 slices bacon, cooked and crumbled OR 1/2 lb. sausage, cooked
- 4 green onions, sliced
- 1 small jar sliced mushrooms
- 1/2 bell pepper, chopped
The night before, cut up the bread and brown the meat. Beat eggs, then add milk and mustard.
In an 8×8 baking dish, layer the bread, onions, bell pepper, mushrooms and meat. Pour the egg mixture over the bread and meat. Layer cheese on top. Sprinkle with parsley.
Put in the refrigerator and let it set overnight.
The next morning, preheat oven to 350F. Bake casserole about 45 min or until the eggs are set.
Prep time: 25 min.
Cook time: 45 min.
Serves: 8.
