My mom made this once when I was in high school. When we kept asking what was for dinner, her reply was "It’s a surprise!" The dish was a hit, and after that, it was always known as Betty Surprise.
- 1 lb. ground beef
- 1 medium white onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 celery stalk, including leaves, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups white rice, cooked
Brown the ground beef in a large skillet.
Drain grease then add the onion, pepper, and celery. Cook until the vegetables are soft, about 10 min.
Add salt, pepper and rice. Mix well.
Cook 10-15 min more or until the rice is heated through.
Prep time: 15 min.
Cook time: 45 min.
Serves: 4.

This is a good way to use leftover rice. Also, my dad said my mom used the celery leaves, but you can leave them out if you want.
