Adobo is a Filipino dish that my family has made for years. You can use pork, chicken, or whatever meat you have at hand.

  • 1/2 cup vegetable oil
  • 1 onion, chopped
  • 1 1/2 lb. pork shoulder or butt, cut in large chunks
  • Salt & pepper to taste
  • 1/4 cup vinegar
  • 1/2 cup pickling spice
  • 1 bay leaf
  • 1 tablespoon paprika or 2 tablespoons tomato sauce
  • White rice, cooked

Heat the oil in large pot over medium heat. Add onions and cook them down, about 15 min.

Add meat, salt and pepper. Brown meat on all sides.

Add 2 cups water, vinegar and spices. Bring to a boil, then reduce heat and simmer 1 1/2 hours. Add water as needed to maintain about 2 cups liquid. The meat should be very tender when cooked.

Serve over cooked white rice, with 2-3 spoonfuls of pan drippings.

Prep time: 30 min.
Cook time: 2 hours.
Serves: 8.
