Henry’s Red Wine Marinade
My dad used this marinade all the time when I was growing up. My memories of him grilling see him using this marinade. It works best with grilled chicken.
Ingredients:
- 1 quart cheap red wine
- 1 quart water
- ½ cup garlic, finely minced
- Salt & pepper to taste
- 1 cup salad oil
How To Make:
Mix ingredients in a large roasting pan or Ziploc bag.
Add meat and marinate from 4 hours to overnight, occasionally turning the meat over.
Grill meat using the marinade as a baste.
Prep time: 10 min. Cook time: None. Makes 1 serving, enough for 3-4 pounds chicken.

Do not use marinade to baste meat within the last 15 minutes of cooking. To be safe, either boil the marinade or just set some aside and use that to baste the meat during cooking.
Dad also swore you just needed to use the cheapest wine—it all tasted good. I will disagree with him—don’t cook with any wine if you are not willing to drink it!
