Grammy’s Green Beans
My dad’s mother loved fresh green beans. This was her favorite way to prepare them, and we’re sure it will be yours, too.
Ingredients:
- ¼ cup oil
- ¼ lb. salt pork, sliced
- ½ onion, chopped
- 2-3 lb. fresh green beans, French cut
- 3 potatoes, peeled and cubed
- Salt & pepper to taste
- White rice, cooked
How To Make:
In a medium pot, heat oil over medium-high heat. Add salt pork and onion. Cook down until done, about 15 min.
Add beans, potatoes, salt, pepper and about 3 cups water. Cover and heat until water boils. Reduce heat to medium.
Cook until beans and potatoes are completely cooked and soft, about 45 min. Stir frequently, and add water as needed.
Serve over cooked white rice.
Prep time: 20 min. Cook time: 1 hour. Serves: 8.
