Adobo
Adobo is a Filipino dish that my family has made for years. You can use pork, chicken, or whatever meat you have at hand.
Ingredients:
- ½ cup vegetable oil
- 1 onion, chopped
- 1 ½ lb. pork shoulder or butt, cut into large chunks
- Salt & pepper to taste
- ¼ cup vinegar
- ½ cup pickling spice
- 1 bay leaf
- 1 tablespoon paprika or 2 tablespoons tomato sauce
- White rice, cooked
How To Make:
Heat the oil in large pot over medium heat. Add onions and cook them down, about 15 min.
Add meat, salt and pepper. Brown meat on all sides.
Add 2 cups water, vinegar and spices. Bring to a boil, then reduce heat and simmer 1 ½ hours. Add water as needed to maintain about 2 cups liquid. The meat should be very tender when cooked.
Serve over cooked white rice, with 2-3 spoonfuls of pan drippings.
Prep time: 30 min. Cook time: 2 hours. Serves: 8.
