This is an appetizer that I stole from my sister. Traci loves it, and I suspect was one of the reasons she married me.

  • 2 cups cooked, shredded chicken breast meat
  • 1/2 cup mayonnaise
  • 3 tablespoons butter, melted
  • 2 tablespoons country-style Dijon mustard
  • Pinch of red pepper
  • 1 cup fresh bread crumbs
  • 1/4 cup fresh parsley, chopped
  • 2 more tablespoons butter, melted
  • French bread, sliced

Heat oven to 400F. In a large bowl, stir together the chicken, mayo, 3 tablespoons butter, mustard and red pepper. Spread into a 10" quiche pan.

In a small bowl, stir together bread crumbs, parsley and 2 tablespoons butter. Spread on top of chicken mixture.

Bake for 20-25 minutes or until golden brown and heated through. Spread on French bread.

Cook time: 25 min.
Serves: 6.
